    2-2 1/2 cups fresh spinach, leaves and stems removed
    1/2 lemon
    1/2 cup of nuts (i used 1/4 pine nuts and 1/4 walnuts)
    1-2 tablespoons olive oil
    1 tbsp nutritional yeast (optional)


This is really easy to make and tweak to your tastes. I love walnuts in pesto so i did a combo with pine nuts-- toasted them both in a skillet for few minutes on the stove and put them in the food processor with the spinach, which wilted the leaves a bit and made smoother blending. I went head and did the nutritional info with 2 tblsp oil but you could definitely use less. Makes about a little over a cup.
