This is a quick and easy recipe that can be frozen for later. This is a quick and easy recipe that can be frozen for later.
Number of Servings: 1


    6 cups canned chicken broth
    1 small can of mushrooms, drained
    4 slices cooked bacon crumbled
    8 ounces velveeta light cheese(labeled 2%)
    1/4 sour fat-free sour cream
    2 tablespoons flour stirred into a little water
    1 32 oz package of hash browns any style you prefer


Combine broth and potatoes and cook about 20 minutes or until potatoes are done. Add mushrooms, bacon , cheese, and sour cream. Heat until cheese is melted. Stir in flour and water mixture to thicken. Makes 6 generous servings, about 1 1/2 cup each. 1 serving = 4 points with Weight Watchers
