    1 can pink salmon, drained, with bones removed, 2 tbsp. lemon juice, 1/4 tsp. ground black pepper, 1/2 cup diced cucumber, 1/4 cup diced onion, 1 fresh hot chili pepper or hot pepper sauce, 1 scallion or green onion.


Place salmon into a large glass bowl. Remove bones and break salmon up into chunks. Combine remaining ingredients and toss to mix. Garnish with additional chili peppers and scallion or green onion, if desired. If salmon is not already cold, chill until ready to serve. Great with rice or crackers.
