Ingredients

    12 oz cubed, trimmed, pork loin
    1 TBSP paprika
    1 1/2 tsp oregano
    1/2 tsp chili powder
    1/2 tsp garlic powder
    1/4 tsp black pepper
    1/8 tsp cayenne pepper
    1 tsp mustard
    3 cups cubed potatoes
    1 cup chopped onion
    2 cups chicken stock
    2 cloves garlic minced
    1 cup julianned carrots
    4 cups trimmed and chopped kale

Directions

Combine spices and mustard and coat pork.

Spray heavy skillet with cooking spray and preheat pan over high heat.

Add meat and cook stirring for 5 minutes

Add onion, carrots and garlic and cook for 10 minutes.

Add potatoes and broth and cook covered for 25 minutes.

Add kale and cook an additional 10 minutes covered.

Makes 6 servings
