    1 cup dry couscous
    1 pkg firm tofu, cubed
    6 roma tomatoes
    1/2 cup spinach
    2 Tb olive oil
    1 Tb ground cumin
    1 Tb basil
    1Tb garlic powder


Preheat oven to 375 degrees.

Spread dry couscous in a casserole baking dish. Place tofu cubes on top of dry couscous.

In a blender combine the remaining ingredients. Blend until smooth.

Pour contents of blender on top of tofu and couscous, do not stir. Place in oven and bake for fifteen minutes.

After removing dish from oven toss contents together. Serve.
