Introduction
This tasty turkey loaf is absolutely delicious either served hot with mashed potatoes, baked squash and green beans, or cold in a sandwich. Ingredients

1 300g. pkg frozen spinach, thawed
1 lb. lean ground turkey
1 small onion, chopped
1 egg, lightly beaten
1 slice whole wheat bread, crumbled
1 clove garlic, minced
3 tbsp freshly grated Parmesan cheese
2 tsp grated lemon rind
1/2 tsp each salt and pepper
Pinch of nutmeg
Directions
Preheat oven to 350F
Squeeze spinach dry; chop finely.
In a bowl, combine spinach, turkey, onion, egg, bread crumbs, garlic, cheese, lemon rind, salt, pepper and nutmeg; mix gently.
Transfer to a 6 cup baking dish, smoothing top.
Bake in 350F oven for 40 minutes or until no longer pink in centre and meat thermometer registers 185F.
Let stand 10 minutes. Pour off any liquids.
Makes 4 servings.

I've been making this since I was a kid. It's an Anne Lindsay recipe & one of my faves. I've tweaked it a bit, sauteeing 1 onion, 3 large cloves garlic for 5 min, then adding a lb of fresh chopped spinach, just til wilted. 1/4 cup dried br crumbs, 2 TBSP lemon zest, & 2X the pepper & parm.
