    6 c shredded zucchini
    3 c sugar
    1 cup oil
    1/4 c unsweetened applesauce
    4 t vanilla
    8 eggs
    3 c white all purpose flour
    3 c whole wheat flour
    4 t baking soda
    2 t salt
    2 t cinnamon
    1 t ground cloves
    1 t baking powder
    1 1/2 c chopped walnuts
    1 c raisins


Preheat oven 350 and move the rack down so the top of the pans are in the center of the oven.
Shred the zucchini and in a large bowl combine the zucchini, sugar, oil, vanilla and eggs. Mix well
Add the rest of the ingredients and mix well.
Grease bottoms only of 4 loaf pans.
Pour batter into pans dividing evenly.
Bake as follows:
8 inch loaves 50-60 minutes
9 inch loaves 1 hour 10 minutes to 1 hour 20 minutes
Toothpick will come out clean when done.
Cool completely on wire raks before slicing.
