Ingredients

    2 cups mixed baby greens
    2 cups Romaine lettuce, chopped

    1 hard-boiled egg, sliced
    4 oz light (1% milkfat) cottage cheese
    1/2 cup sliced mushrooms
    1/2 cup cherry tomatoes
    1/2 cup celery, diced
    1/2 cup roasted red peppers, chopped

    2 Tbsp low-fat Italian dressing

    1 slice whole-grain bread

Directions

Toss the lettuces together in a large bowl. Top with the egg, cottage cheese, and vegetables. Drizzle on the dressing (or serve it on the side and dip your fork tines into it before each bite) and serve with a slice of whole-grain bread.
