    1 cup water
    1/2 Cup shortening
    1/3 Cup potato starch flour
    2/3 Cup rice flour
    1/2 teaspoon salt
    1 Tablespoon of splenda or sugar
    4 eggs


Preheat oven to 450. Grease a cookie sheet.

Combine 1 cup of water and 1/2 cup shortening in a large saucepan and bring to a boil. Mix 1/3 cup Potato starch flour, 2/3 cup of rice flour, 1/2 t. salt, 1 T sugar and add to water and shortening. Stil until mixture forms a ball that leaves the sides of the pan. Remove from heat and cool slightly.
Add the unbeaten eggs, one at a time, beating well with an electric mixer.
Drop by tablespoons onto cookie sheet. Leave space for them to expand. Bake at 450 for 20 min, then reduce heat to 350 and bake for 20 more minutes. Remove from oven and prick with a knife to let steam escape.

When cold, fill with filling.
