Introduction

I adapted this recipe from a kosher food recipe on about.com. I made my own croutons out of two leftover hot dog rolls ("crouton" means "crust") and used sirachi sauce instead of tabasco sauce. These can be prepared up to step 6 a week in advance and frozen - don't need to defrost but bake 20 minutes longer. I adapted this recipe from a kosher food recipe on about.com. Ingredients

    16 oz pkg chopped frozen spinach, thawed and drained
    3/4 c grated parmesan
    1 tbsp dried minced onion flakes
    1 egg
    1 c seasoned mini croutons (or make your own)
    2 tbsp butter
    1 tbsp prepared crushed garlic (I used minced)
    1/8 tsp Tabasco (I used sirachi and a little more)


Directions

Number depends on size of pieces.

Preheat oven to 375. Lightly grease a cookie sheet (I used a pie plate) w/ cooking spray. In a large bowl, mix spinach, paremsan, onion, egg, croutons, butter, garlic and hot sauce. Mix well. Shape spinach mixture into 1" balls using hands or melon baller. Arrange on cookie sheet. Bake uncovered 15 minutes until croutons are slightly golden.
