Number of Servings: 10


    Mushrooms (1/2 lb, sliced)
    Celery (1/2 cup diced)
    Carrots (1/2 cup diced)
    Onion (1 medium)
    Chicken (1/2 lb), thigh meat gives best flavor but a little fat
    Chicken stock/broth (4 quarts)
    98% Fat Free Cream of Chicken condensed soup (1 can)
    Wild Rice (Minnesota or Canada Long Grain) (1/2 lb)
    Salt, Pepper, Thyme all to taste


Sautee veggies in ~1/4 cup of the chicken broth.
Soak (while veg cooks) then rinse wild rice.
Add rice, condensed soup and chicken broth. Season generously w/ salt, pepper and ground thyme.
Allow to simmer for 2 hours, rice will plump and open (you want it to be softer than if cooked for a side dish).

Serve 2 cup serving, topped with chopped chives and bacon, if desired (bacon not in calorie calculation). Great with a dense bread for dipping, also.

Makes at least 10 2-cup servings.
