Ingredients

Zucchini, 2 cup, sliced
Yellow Sweet Corn, Frozen, 1 cup kernels
Salt, .5 tsp
Pepper, black, 1 tsp
Garlic, 3 tsp
Baby Carrots, raw, 25 medium
Onions, raw, 1 cup, chopped
Beans, pinto, 2 cup (canned, or cooked to soften)
Barley, pearled, raw, .5 cup
2 Italian tomatoes chopped
2 cup cherry tomatoes, halved
1 can (2 cups) 99% fat free chicken broth
3 cups water
Directions
Put water and broth into a large stockpot, add carrots, onion, barley, tomatoes, salt, black pepper, and garlic. Bring to a rolling boil for 5 minutes. Reduce heat to medium (still boiling) and continue boiling for about 25-30 minutes. Add zucchini, pinto beans, and corn. Boil for about 20 minutes longer, or until all ingredients are tender, and the flavors have had a chance to meld. ENJOY!
