Incredible vegan hummus. Seriously. If you aren't vegan, you will want to be after this (or you will just wow your veg friends with your compassionately savvy skills).

Great for "dieters" - no oil, tons of health, ridiculously fab flavor. Lime makes it pop, garlic keeps it crazy savory.

Number of Servings: 50

Ingredients

    * Chickpeas (garbanzo beans), 850 grams (aka two cans plus bean juice. If using fresh beans, it's 1 3/4 cups plus a little H20)
    * Juice of 1 Lime (or 3 tablespoons) plus wedge or garnish
    * Garlic, 1 tsp
    * Salt, .5 tsp (or to taste)
    * Cumin powder, .5 tsp
    * Curry powder, .5 tsp plus a lil' for garnish
    * Cayenne powder, just a small pinch (to taste) plus a lil' for garnish


Directions

Combine one full can of chickpeas (with it's bean "juice" from can) and drain the other can of chickpeas (saving some of the bean water for later).

Blend everything in blender (you'll have to pat down and blend several times due to the thickness) a food processor will also work.

Add a few tablespoons of bean "juice" if it seems to thick.

Garnish with a lemon wedge and little cayenne powder for artistic awesomeness. Ay, Chihuahua.

Refrigerate in tightly sealed container, keeps for a week.
