Introduction

Number of Servings: 9

Ingredients

    4 cups broth, vegetable or chicken low sodium
    1 Medium zucchinni diced
    1 large celery stalk diced
    3 small carrots, diced
    1/2 med onion diced
    4 cups fresh spinach chopped
    1 roma tomates diced
    1/2 c lentils uncooked
    1/4 wild rice uncooked
    8 cups water
    1 tsp poultry seansonings
    1 tsp black pepper
    1 tsp Italian seasoning
    1/2 tsp Mrs Dash red pepper seasoning
    1/2 chopped broccoli
    3 Tblsp parmesan cheese grated

Directions

In large pot add water and broth and bring to boil add in wild rice and lentils cook for 30 minutes stirring occasionally. Add all vegetables and seasonings, except parmesan cheese. Cook for an additional 20-30 minutes until all vegetables tender. Taste and adjust seasonings as needed.
Serve 1 cup with 1 tsp parmesan cheese sprinkled on top.

I did not add any salt so this is why it is so low. The parmesan cheese on top adds a little salty flavor when eating but try not to stir it in. Great with a half of a sanwich or crackers. Warm and delicious
makes approx 9-1cup servings
