Introduction

Broccoli Quiche Broccoli Quiche
Number of Servings: 8

Ingredients

    1/2 cup onion, diced
    1 cup broccoli, diced and cooked
    1cup eggsbeaters (Liquid egg substitutes work well too)
    1/2 cup cheese (four cheese pkg- Cheddar, Colby, Monterey and Mozzarella)
    1 1/2 cup 1% milk
    1/4 tsp nutmeg
    1/4 tsp cayenne pepper
    1 - 9" pie crust -

    NOTE: If omitting the crust - add: 1/2 cup all purpose flour, 1/2 tsp baking powder to mixture)

Directions

Preheat oven to 350 degrees. Lightly spray a 9" pie plate with Pam. Lay the pie crust in plate, prick with a fork to prevent bubbles and cook in preheat 350 degree oven for 10 minutes or until lightly browned. While crust is baking, cook diced onion, broccoli, and mushrooms until tender. Set aside to cool for a few minutes. In a large mixing bowl, whisk together eggs, milk, cayenne pepper, nutmeg and salt to taste.(NOTE: If not using the pie crust, at this point add the 1/2 cup all purpose flour and 1/2 tsp baking powder to mixture). Then stir in vegetable mixture and add the cheese. Pour mixture into lightly grease pie plate or pie crust and bake at 350 degrees for 40 minutes or until golden and knife inserte comes clean.

Cut pie in to 8 servings
