Introduction

This is a delicious soup full of healing ingredients to soothe the swine flu beast & maybe even help you build your immunity to fight it. Only 127 calories per serving too! Ingredients

    1 T olive oil
    5 cloves garlic, minced
    6 green onions, sliced (white through green parts)
    1 T ginger root minced
    1 carton of vegetable broth
    2 c water
    1 maitake mushroom bunch, broken apart into small pieces
    10 shitake mushrooms sliced (remove stems)
    8 baby bella mushrooms sliced
    3 stalks lemongrass, partially broken & bruised
    1/2 c dry white wine
    1/2 t thyme
    salt & pepper to taste
    1 T Texas Pete hot sauce
    1-1/2 c shelled edamame

Directions

Saute garlic, green onions, & ginger in olive oil until softened, no more than 5 minutes. Add vegetable broth, water, lemongrass, wine, mushrooms, salt, pepper, thyme, & Texas Pete sauce. Let simmer over a low heat for 20 minutes. Add edamame & cooke 5 minutes more. Remove lemongrass. Add salt & pepper to taste.
Serve with whole wheat bread & a nice salad.
