    4 eggs, beaten
    4 slices bacon, chopped
    1/4 cup Onions, chopped
    9 inch Pie crust, frozen
    2.75 oz Cheddar Cheese, shredded
    1.75 oz Pepper Jack Cheese, shredded
    8 oz Ricotta Cheese, part skim milk
    1 tsp Salt
    1 tsp White Pepper
    1 tsp Ground Thyme
    pinch Smoked Paprika


Cook bacon and onion in pan over low heat until cooked through. Whip eggs, cheeses and spices together in a bowl. Add bacon and onion to bowl with cheese mixture when done cooking and mix well. Pour in pie shell and bake at 350 for 40 mins.
