    1 tsp extra virgin olive oil
    1 small onion, finely chopped
    1 clove garlic, finely chopped
    1 1/4 lb extra lean ground turkey
    3/4 tsp cinnamon
    1/4 tsp nutmeg
    28 oz can whole tomatoes, no salt added
    1 tsp sea salt
    8 whole wheat lasagna noodles
    10 oz frozen spinach, thawed and drained
    1 large egg
    15 oz low-fat ricotta cheese
    3/4 c reduced-fat shredded mozzarella cheese


Hands-on cooking time: 45 minutes. Total time: 1.5 hours.
Makes 8 servings (1 roll-up per serving).

Heat olive oil over medium heat. Add finely chopped onion and cook about 5 minutes until softened. Add garlic and cook for an additional minute. Turn heat to medium-high, and cook ground turkey with onion and garlic. Use a spatula to break up turkey, and cook until no longer pink. Sprinkle cinnamon and nutmeg over the turkey mixture, and pour on tomatoes and sea salt. Cover and reduce heat to low. Cook for 20 minutes, occasionally stirring and using spatula or wooden spoon to break up tomatoes.

Meanwhile, bring a large pot of water to a boil. Cook 8 lasagna noodles according to package instructions--don't overcook. Drain noodles and set aside.

Preheat oven to 400.

Drain remaining water from thawed spinach. In a large bowl, combine spinach, egg, ricotta cheese, and 1/4 c mozzarella. Stir until well mixed. (Set aside remaining 1/2 c mozzarella.)

When meat sauce is done cooking, spread 1 c in the bottom of a casserole dish (9x10 or 8x12). Set out cooked lasagna noodles, and spread 1/8 of mixture on each noodle. Roll up each noodle and place in the casserole dish, seams down. Cover noodles with remaining meat sauce and sprinkle 1/2 c mozzarella over the top.

Cover with aluminum foil and bake for 20 minutes. Remove foil and bake or broil for an additional 5 minutes, until the cheese starts to bubble and brown.
