Introduction

This intriguing flavour combination makes a nice change from your day in day out sandwich routine. This intriguing flavour combination makes a nice change from your day in day out sandwich routine.

Ingredients

    4 slices whole wheat bread
    4 tsp dijon mustard
    2 slices turkey bacon, cut into thirds
    1 small apple, sliced
    2-4 thin slices of a medium-sized onion
    1 oz light cheddar or mozzarella, shredded

Directions

1. Lightly toast the four pieces of bread. Spread mustard on either two or all four pieces.

2. In a small frying pan, cook the 6 small pieces of turkey bacon. Place 3 pieces on each of two pieces of toast.

3. While the bacon is cooking, layer apple slices on other two pieces of toast, topping with onions and then shredded cheese. You may have extra apple that doesn't fit. I just serve it as a side to the sandwich.

4. Place all four slices under an oven or toaster oven broiler for approximately 5 minutes, or until cheese is melted. Match a bacon side to an apple side, slice in half and serve.

Makes two sandwiches.
