Number of Servings: 48


    1 peck of tomatoes - peeled
    6 large onions - diced
    2 pints vinegar
    1 pint sugar
    dash salt
    pepper to taste


combine all ingrediants into large saucepan and simmer, stirring frequently for an hour. Cook slowly....Ladle into hot sterilized jars, leaving 1/2 inch headspace, seal with 2 piece lids. Process in boiling water bath for 10 min.
Yield 48 servings

  • I make mine almost the same except I add, allspice 1/4 tsp and 1/2 tsp tabasco and sub out the sugar with a combo of stevia & molasses (molasses 2 tbp and stevia to taste). Cool that some of us are doing this! - 12/13/10
