    1 lb thin cut eye of round steak, cut into strips
    2 medium onions, sliced
    1 lb mixed color bell peppers, sliced
    3 cloves garlic, minced
    28 oz can diced tomatoes
    2 tsp parsley, dried
    salt & pepper to taste


In a large frying pan saute the onions and beef until the onions are tender crisp.
Add the peppers and garlic.
Cook until heated through.
Add the tomatoes & seasonings.
Cook until heated through and reduced as much as desired.

Serve over pasta, rice or potatoes.
