    1 10.5 oz. package reduced-fat firm silken tofu
    1.5-2 Tablespoons olive oil
    2 teaspoons lemon juice
    1-2 teaspoons sweetener of your choice
    2 teaspoons apple cider vinegar
    1/2 teaspoon prepared mustard or mustard powder
    1/2 teaspoon salt


1. Place all ingredients in a food processor fitted with a metal blade or in a blender, and process several minutes until the mixture is very smooth and creamy.

2. use at once, or transfer the mayonnaise to a storage container, and chill it in the refrigerator. It will keep for about a week.

Makes about 1 1/3 cups (21 1/3 one tablespoon servings).
