Introduction

Delicious vegan gingerbread. Not too sweet so it's perfect for brunch. Delicious vegan gingerbread. Not too sweet so it's perfect for brunch.

Ingredients

    3/4 cup maple syrup (I used sugar free)
    3/4 cup molasses
    1/3 cup applesauce
    1 tbsp vanilla
    2 tsp ground ginger
    1 tsp cinnamon
    1 tsp ground nutmeg
    1/4 tsp ground cloves
    1/4 tsp allspice
    4.5 cups unbleached white wheat flour
    1/2 tbsp baking powder
    1/4 tsp salt
    2.5 cups non-dairy milk (I used unsweetened vanilla almond milk)

Directions

Preheat oven to 350. Grease 2 bread pans.

Combine maple syrup and molasses. Add applesauce and vanilla and mix.

In another bowl, combine flour, baking powder, spices, and salt and mix well. Alternately add flour mixture and soy/almond milk to maple/molasses mix and mix well. Pour into bread pans and bake about 45 minutes, or until toothpick inserted in center comes out clean.
