Ingredients

    # Olive Oil, Extra Virgin, 2 tbsp
    # Onions, raw, 1 cup, chopped
    # Garlic, 2 clove
    # *Cumin (ground), 1 tbsp
    # Chickpeas (garbanzo beans), 2 cup
    # *Bell pepper, Red, 1 medium pepper
    # Turnips, .1/2 peeled
    # Yellow Sweet Corn, Frozen, 0.5 cup kernels
    # Salt, 1 dash
    # Pepper, black, 1 dash
    # Tomato Sauce, 2 cups

Directions

Heat the olive oil in a large saucepan over medium heat.

Stir in the onion, garlic, cumin, and curry powder. Cook and stir until the onion has softened and turned translucent, about 5 minutes.

Add the chickpeas (garbanzo beans), red bell pepper, turnip, corn, and tomato sauce. Season with salt and black pepper.

Bring to a simmer over medium-high heat, then reduce heat to medium-low, cover, and simmer until the vegetables are tender and the curry has thickened, 1 1/2 to 2 hours.
