Introduction

I copied this from a side I had at a restuarant. The veggies should be cooked until brown. You can also add red peppers, onions, whatever else. I copied this from a side I had at a restuarant. The veggies should be cooked until brown. You can also add red peppers, onions, whatever else.

Ingredients

    2 Zucchini, chopped
    1 c. whole mushrooms, cleaned and peeled
    1-2 T olive oil
    2 t. Italian Seasoning (or to taste)
    Salt and Pepper to taste

Directions

Heat olive oil in a large pan. Add zucchini and seasoning. Cook for a few minutes before adding the mushrooms. Cook covered until soft.

*Veggies let off a lot of water. May need to drain it so they brown properly.

Serves about 3.
