Introduction

Individually portioned egg dishes that are perfect for a party! Individually portioned egg dishes that are perfect for a party!
Number of Servings: 10

Ingredients

    10 eggs plus two egg whites
    1 small bell pepper, chopped
    .5 cup chopped scallions
    1 medium tomato, chopped
    8 medium mushrooms, chopped
    Dried basil, salt, pepper to taste
    1/2 cup milk

Directions

Grease a non-stick 12-cup muffin pan very well. Preheat the oven to 325.

Beat the eggs with the milk in a large bowl. Add the herbs and beat again. Fold in the chopped veggies.

Pour the egg mixture into the muffin tins, filling about 2/3 full.

Bake until just barely set -- I won't tell you how long this takes. You just have to check on them every minute after five minutes or so. If you go by time, they might finish cooking before you check, and then you'll have nasty hockey puck eggs.


Makes 10 or so Muffin Fritatas, ready to please a whole crowd of people!!
