    * 3 mangos-- ripe
    * *Dole Pineapple Chunks in 100% Pineapple juice No Sugar Added, 1 can
    * *1 large red sweet pepper
    * 2 serrano Peppers
    * 1 medium red onion
    * 2 limes
    * *Honey, 3 or more tbsp
    * Hot Pepper Sauce, 3 tsp
    * Cilantro, chopped, 3 tbsp or more


Peel and dice the mangos and put in a large bowl. Drain and rinse pineapple, then chop or dice if pieces are too large; add to bowl. Chop the red pepper and onion and add to bowl. Chop the serrano (I have also used jalapenos with no problem) and remove seeds and pith if you want less heat; add to bowl. Juice the 2 limes into the bowl, then add honey. Start with 3 tbsp, but you may need to add more, depending on the sweetness of the mangoes. We often have trouble gettin good mangoes, so we add a little more honey to compensate. Also add pepper sauce for both a little more heat and a little more liquid. Chop cilantro and add to bowl (I like a lot, so I'll put in considerably more than 3 tbsp). Stir until well-mixed. Tastes better if it sits a bit, at least an hour, preferably in the refrigerator.
