    * Onions, raw, 1 medium (2-1/2" dia)
    * Carrots, raw, 1 medium
    * *Potato, raw, 2 cup diced
    * Garlic, 1 clove
    * Rosemary, dried, 2 tsp
    * Butter, salted, 2 tbsp
    * Pepper, black, 2 tsp
    * Mixed Vegetables, frozen, .5 package (10 oz)


Chop all vegetables into bite-sized pieces, or smaller if preferred. Dump into large bowl and season with pepper, rosemary, and chopped garlic clove. Mix with hands to combine vegetables and seasoning.

Coat a large baking dish with butter or non-stick spray before dumping vegetables into dish. Top veggies with 2 tablespoons of REAL butter, cut up into small pieces that you place randomly over the mixture.

Bake at 425 for 1 hour or until vegetables reach desired done-ness. You may take the pan out and stir the vegetables after half an hour.

***Makes six servings.
