Ingredients

Spinach, fresh, 1 package (10 oz) )
ground turkey 99% lean, SHADY BROOK, 19 oz
egg white, fresh, 2 large (
Bread crumbs, dry, grated, seasoned, 1 cup
*Asiago Cheese, 4 oz (
Parmesan Cheese, grated, 0.5 cup
*Cabot 75% Light Vermont Cheddar (1oz), 6 oz
*Garlic (fresh, raw, 1 clove), 2 serving
Pepper, black, 1 dash OR TO TASTE
*cooking spray, extra virgin olive oil, 1 serving
Scallions, raw, 8 medium (4-1/8" long)
1 oz ruby port wine
White Wine, 2 fl oz
*Herb Ox Sodium Free chicken broth, .1/3 CUP
2 tablespoons corn starch
Directions
HEAT OVEN TO 350.
Steam spinach, squeeze out water, chop with scallions and garlic cloves in food processor.
mix spinach, scallions, garlic,turkey, cheeses, bread crumbs, egg whites and pepper in large bowl.
Roll into meatballs (about 50) and place on olive oil sprayed
cookie sheets and bake for 20 minutes. Place in serving bowl.
Deglaze the cookie sheets with the mixture of port wine chicken broth. Dissolve the cornstarch in the white wine and add to a sauce pot with the port and chicen broth. Bring to a boil and simmer until slightly thickend. cover the meatballs with the sauce, and serve as is or over pasta or rice. Each meat ball is 45 calories not counting the rice or pasta.
