Introduction

This is an old family favorite, comes from my great grandmother, they were farm folk. I have only altered the fat a little, you can use corn oil or margarine. I am sure that you can use whole wheat or craked wheat flour, I haven ot tried those yet but probably will. Ingredients

    ! egg beaten
    1 1/2 cup Low-fat buttermilk
    2 Tblsp melted butter
    1 cup flour
    1 tsp salt
    1/2 tsp baking soda
    2 tsp baking powder
    1/2 cup cornmeal

Directions

In large bowl combine egg, buttermilk and butter. Set aside. Mix together all dry ingredients. Add to wet, mixing until just moistened. Do not over beat, batter might be lumpy.
Cook on hot griddle or skillet, can Spray with Pam to start.
Makes 10-4" pancakes.
