    3 (6-ounce) boneless, skinless chicken breast halves
    2 eggs
    ¾ cup whole-wheat bread crumbs (3 slices bread)
    1 TBsp water
    black pepper and seasoning salt, (can add any spices you like, I use Greek Seasoning)


Makes 4 servings

Bread crumbs, make your own: Use stale bread, I use a low calorie/carb bread. Dry it out in oven on warm for 30 minutes. Place in a zip lock baggie and use a rolling pin to crush to a fine crumb. I then place them in the freezer for later use. If you only want to make for this recipe then toast 2 slices of whole-wheat bread in a 300°F oven until dry, about 10 minutes. Pulse in food processor until fine crumbs form.

Preheat oven to 350 degrees. Line cookie sheet with tin foil and spray with nonstick coating.
1. Trim excess fat from chicken. Cut each piece into equal size strips, about ½ inch thick.
2. Whisk egg and water with a pinch of seasoning salt in a shallow bowl. In a zip lock baggie, combine crumbs, seasonings, and pepper.
3. Dip both sides of strips into egg mixture. Transfer to crumb mixture; shake in bag until both sides of chicken are coated with crumbs. You can do more than one strip at a time in the baggie. Set strips on a tin foil covered cookie sheet.
4. Cook in 350 degree oven, 10 minutes per side, until golden brown and crisp. Serve hot.
