Yummy combination of flavors that is a great complement to pork and poultry. Good hot or cold - I prefer cold. Can make ahead to cook later; gives flavors time to meld. Ingredients

    1 lb sweet potatoes, peeled
    2 large apples (skin on)
    1/3 C. Craisins
    3/4 tsp. crystalized ginger, diced fine
    1/4 C. apple juice concentrate
    1/4 C. water
    2 TB brown sugar substitute (Sugar Twin)
    2 tsp lemon juice
    1/2 tsp cinnamon
    1/4 tsp ground cloves
    Optional: 1 TB butter, in thin slices

Directions

Preheat oven to 375. Spray an 8" baking pan or shallow casserole dish (I use Corningware). Cut sweet potatoes into thin slices and quarter. Core and thinly slice apples, leaving skin on for extra fiber. Layer 1/2 of sweet potatoes in pan, topped with 1/2 of apples. Sprinkle 1/2 of craisins over the layer and 1/2 of ginger. Repeat with second layer.

In a measuring cup, combine apple juice concentrate, water, brown sugar substitute, lemon juice & spices. Mix well and pour over layers. Cover and bake for 45 min. Remove cover and dot top with butter (or not; equally yummy without). Bake an additional 15 min. uncovered.

Serving size = 1/2 C. Yield: 8 servings. Serve hot or cold.
