Yummy, nutritious, and filling! Great winter comfort food. Yummy, nutritious, and filling! Great winter comfort food.
Number of Servings: 4

1/4 Cup Green Split Peas, Dry
    1/4 Cup Lentils, Dry
    1/4 Cup Pearled Barley, Dry
    2 1/2 Cups Vegetable Broth
    1 Cup Water
    1 Medium Carrot, diced
    1/2 Cup Onion, chopped
    1/2 tsp Kosher Salt
    1/4 tsp Black Pepper
    1 1/2 tsp Thyme, dry
    1 tsp Basil, dry

Put all ingredients into heavy bottomed pot and cook on medium-low heat for approximately 2.5 hours. If it begins to boil, turn to low and continue cooking until peas, lentils, and barley are tender. Once everything is the texture you prefer you can leave the soup as is or put in a food processor or use a hand blender until smooth.
**You can also use a slow cooker.
