Number of Servings: 6


    1 Medium Roasting Pan
    5 Sweet Potatoes (5" Long)
    4 Cloves Fresh Garlic
    2 Tbsp Extra Light Olive Oil
    1.4 Pounds Thin Cut Chicken Breasts


Preheat Oven to 400, line roasting pan with foil.
Rinse and peel sweet potatoes, cut .5" off each end, and then cube in to approx 1" pieces. Set aside in a large mixing bowl.
Mince 4 cloves of garlic and place on top of potatoes. Then add 2 Tbsp of Extra Light Olive oil and mix togethr by hand.
Place Sweet potatoes, garlic, and olive oil mixture in to roasting pan. Cook for 15 minures.
After 15 minutes, take pan out of oven and cover with chicken.
Place pan back in oven and cook for an additional 30 minutes.
Remove pan, let stand for 5 minutes, then serve.
