Introduction

Ingredients

    1 frozen ready-to-bake pie crust
    2 (8-ounce) packages cream cheese, room temperature
    2 (8-ounce) containers mascarpone cheese, room temperature
    1 1/4 cups sugar
    2 teaspoons fresh lemon or lime juice
    1 teaspoon vanilla extract
    4 large eggs, room temperature
    strawberries or raspberries for topping (optional)

Directions

Makes enough filling for one 9-inch pie, plus about 50% more for cheesecake cupcakes or a second, smaller crust.

Preheat the oven to 350 degrees F.

Beat the cream cheese, mascarpone cheese, and sugar in a large bowl until smooth, scraping down the sides of the bowl with spatula.

Beat in the lemon juice and vanilla.

Add the eggs, 1 at a time, beating until blended after each addition.

Pour cheese mixture into the crust, then place the pie crust in a large roasting pan and place it in the oven. Before closing the oven, fill the roasting pan with cold water as until the water level in the roasting pain is just under the rim of the pie crust pan. This water bath will help control the temperature of the cheesecake as it bakes.

Bake until the center of the cheesecake moves only slightly when the pan is shaken, about 1 hour 5 minutes.

To make cheesecake cupcakes, use paper or foil cupcake cups in a cupcake/muffin pan. Use the same water bath method for the cupcake pan. Baking time will be slightly less, 45-55 minutes.

After the cheesecake is done baking, turn off the oven and let the water bath cool for 30 minutes before attempting to remove the cheesecake. The water will be very hot, and it is easy to spill when lifting the pan.

Remove the cheesecake and place strawberries or raspberries on top if desired. Transfer the cake to a rack and cool for 1 hour. Refrigerate until the at least 8 hours, until firm and cold.

After cooled, you may want to drizzle with chocolate or berry syrup to decorate. Be creative!
