Introduction

Number of Servings: 12

Ingredients

    1 cup whole wheat flour
    1/2 cup soy flour
    1/4 cup almond meal/flour
    1/2 tsp. baking soda
    1 1/4 tsp. baking powder
    1/3 cup plain fat free yogurt
    1 large egg
    3 egg whites
    2 tbsp. skim milk
    3 medium bananas, mashed
    1/3 cup chopped walnuts
    cooking spray with flour for baking

Directions

1. Preheat oven to 350.

2. Stir together flours, baking soda, and baking powder. Set aside.

3. In separate bowl, beat yogurt with egg and egg whites until smooth.

4. Add milk and continue to mix.

5. Alternate stirring in flour mixture and mashed bananas to creamy mixture.

6. Fold in nuts.

7. Pour mixture into muffin pan greased with cooking spray.

8. Bake for 45-55 minutes.

Makes 12 muffins/servings
