Tofurkey Italian Sausage (2 Sausages, diced
Beans, white, (1 can)
Sweetpotato, medium, diced
Celery, 3 stalks, diced
Onions, 1 medium, diced
Garlic, 2 tsp, minced
Diced Tomatoes, 1can
Swiss Chard, 6 cup, chopped
Carrots, 2 medium, diced
Vegetable Broth, 2 cup
Water, tap, 6 cup
Oregano, 1 tsp
Black pepper, to taste
Crushed red pepper, to taste
Directions
Add all ingredients to soup pot.
Bring to a boil.
Reduce heat & simmer until all vegetables are tender.
Makes 6 large servings

Bought a large, very lovely bunch of red Swiss chard, & looked for a recipe.This 1 attracted me because I have some canned butter beans & smoked sausage to use up, & had the rest of ingredients on hand.This recipe is a keeper; will definitely make again, only healthier after pantry stuff is used up. - 10/23/10
