Found it on the web and changed a few ingrediants so it wasn't so spicy! Found it on the web and changed a few ingrediants so it wasn't so spicy!
Number of Servings: 12


    6 Frozen Chicken Breasts, skin and bone removed
    2 Cups Salsa
    1 can Sweet Corn
    1 can tomatoes
    1 tsp. Ground Cumin
    400g Fat Free Sour Cream
    16oz Fat Free Ricotta Cheese


Put frozen chicken breasts in slow cooker, add remaining ingrediants except cheese and sour cream. Cook on high for 1 hour then turn down heat to low and cook another 4-1/2 to 5 hours. If you want a thicker stew, remove half the liquid. Add cheese and sour cream stir, cover, and let cook until smooth about another half hour. If you want to cook the entire time on low allow to cook an additional 2 hours.
This can be served over rice or wrapped in flour tortillias (not included in the nutritional info)
One serving is half the breast.

    Thank you it is really easy, and tastes pretty good. I can't eat real spicy foods so I was worried about the salsa (I used medium). My picky father even enjoyed this one. LOL Hope you enjoy it!
