You can use a variety of cake mixes: orange, coconut & lemon are my favorite. You can use a variety of cake mixes: orange, coconut & lemon are my favorite.
Number of Servings: 12


    1-15 1/2 oz. can crushed pineapple in juice -drained (use juice in cake)
    1-18.25 oz. pkg. orange, coconut or lemon cake mix
    1-11 oz. can mandarin oranges in light syrup (drained)
    2 eggs
    1/2 cup sour cream, lite
    1 -1 oz. sugar free, fat free vanilla instant pudding mix
    8 oz. cool whip lite


Preheat oven 350. Combined the reserved pineapple juice, cake mix, mandarin oranges, eggs & sour cream in large bowl. Beat with mixer at medium speed until well blended.

Pour batter into sprayed 13 x 9 dish. Bake 35 minutes or until wooden pick inserted in center comes out clean. Cool on wire rack.

Combine drained pineapple, whipped topping and vanilla pudding: mix at low speed just until blended. Spread pineapple mixture evenly over top of cooled cake. Cover and store in refrigerator.
