Introduction

A way to get lots of veggies into a meal. A way to get lots of veggies into a meal.
Number of Servings: 8

Ingredients

    4 Chicken Breast, skinless, boneless, cut into bite size pieces
    1 C onions, chopped
    3 C fresh peppers (green, red, yellow) stips
    2 C celery, chopped
    2 C carrots, chopped
    4 C Bok Choy, chopped
    2 C chicken broth
    2 oz red wine
    25 g cornstarch
    2 oz water to mix with cornstarch

Directions

Spray wok with pam then fry onions, mushrooms and chicken. Once chicken is no longer pink, add carrots, celery & peppers.
Stir fry about 5 minutes. Add broth and wine. Let simmer.
Mix cornstarch and water. slowly add till as thick as you like.
Add bok choy and mix. Heat 3 -5 minutes and serve.
Great with rice or french bread (not included in nutrition count).

Makes approx 8 servings of 1.5 cups
