    Egg white, 3 serving
    Granulated Sugar, 75 grams
    *Flour, white, .5 cup
    *Coarse Wholemeal Flour, 40 gram(s)
    Pistachio Nuts, 48 grams
    Craisins, 50 gram(s)


beat egg whites until peaks form, then slowly add in the sugar and beat until glossy. Mix dry ingredients in a bowl and fold into the egg whites. Pour into greased and lined loaf tin and bake at 180 for 30 minutes until the top is golden and it is set. Turn oven down to 140 and remove Biscotti. Pull out of pan and cool. Once cold slice into slivers as thin as your knife will allow and place back in oven for further 15-30 minutes turning mid way through until crispy. Makes approx 16
