    1 block of extra Firm Tofu, drained and pressed
    1/4 cup nutritional yeast
    1 tbsp Bragg's Liquid Aminos (or soy sauce)
    1 tsp garlic powder
    1 tsp onion powder
    1 tsp dried basil
    2 tsp dijon mustard
    2 slices of vegan cheese
    6 sundried tomato pieces
    2 tbsp fresh parsley, chopped
    2 tbsp Vegan Mayonaise (Iuse Veganaise)
    2 tbsp olive oil
    1 cup breadcrumbs (I use Panko style whole wheat crumbs)


Preheat oven to 350 degrees. Line a cookie sheet with foil. After draining and pressing the tofu VERY well, mush it up with your hands in a medium sized bowl. Add in the onion powder, garlic powder, nutritional yeast and basil. Mush it all together very well with your hands. Divide into 4 equal pieces. Make each piece into an oblong patty. In the center of two of the patties, layer the mustard, vegan cheese, sundried tomatoes, and fresh parsley. Cover with the remaining 2 patties and seal the edges with your fingers. With your hands, smear 1 tbsp Vegan Mayo all over each pocket. Then coat with breadcrumbs. Drizzle 1 tbsp olive oil on each and bake for around 20 minutes, or until breadcrumbs are nice and crispy. Makes 2 big pockets.
