    1 egg
    1/2 cup finely chopped almonds
    2 cups pomegranate juice
    2 teaspoons minced crystallized ginger
    1 tablespoon water
    1/4 bread crumbs
    4 boneless chicken breast (5 ounces each)
    1 tablespoon honey


Preheat oven to 425F. Coat a baking sheet with cooking spray.

Whisk the egg with the water in a shallow dish. Dip the chicken into the egg and then the nut mixture. Place on the prepared baking sheet and coat with cooking spray.

bake, turning once, for 15 minutes or until a thermometer inserted in the thickest portion registers 165F. Let rest 10 minutes then slice the breasts.

meanwhile, bring the pomegranate juice, honey, and ginger to a boil. Boil for about 15 minutes or until reduced by half. Remove from heat and set aside.

place chicken on plate and drizzle with pomegranate syrup.
