Ingredients

    Cumin seed, 1 tsp
    Mustard seed, yellow, 1 tsp
    Canola Oil, 1.5 tbsp
    Garlic, 2. clove
    Onions, raw, 1 medium (2-1/2" dia) chopped
    Spinach, fresh, 1 package (10 oz)
    Red Ripe Tomatoes, 1 large whole (3" dia) chopped
    Jalapeno Peppers, 4 peppers
    Coconut, raw, 0.5 cup, shredded
    Split Peas, 0.1 cup
    Peanuts, dry-roasted, 0.5 cup
    *Raw Toor dal - 0.5 cup, 2 serving (remove)
    Brown Sugar, 1 tsp packed
    Water 5 cups

Directions

1 serving = 1.5 cup
Wash the lentils and put in a pressure cook with 5 cups of water and peanuts and salt. Wash and chop spinach and tomato and add to the lentils. Place the lid with whistle and cook for 5 whistles. Turn off heat.

When the pressure goes down open the lid and add more water if needed. Turn on heat. Grind grated coconut with hot peppers and garlic and add to the cooked lentils. Keep on simmer.
In a separate pan, heat oil and add mustard and cumin. When they start spluttering, add chopped onions and stir fry until brown. Add turmeric and red chilli powder if needed. Turn off heat.

Add this mixture to the simmering lentils. Turn off heat and serve hot.
