    2 tablespoons oil

    1 medium onion, sliced

    2 garlic cloves, sliced

    1 jalapeno or chipotle in adobo, sliced (optional)

    1 teaspoon salt

    2 cups plum tomato in sauce

    pinch sugar

    1/2 teaspoon oregano


    1 head cabbage

    2 tablespoon olive oil

    1 medium onion, diced

    2 garlic cloves, minced

    2 teaspoon cumino, ground

    1 pound ground meat (preferably turkey)

    2 eggs boiled, chopped

    2/3 cup breadcrumbs

    1 teaspoon salt

    1/2 teaspoon black pepper

    2 cups cooked rice

    1 carrot, diced

    1 bell pepper, diced

    1 celery stalk, diced


Prepare Salsa:

Heat oil in saucepan over medium heat.
Add onion and sautee 5 minutes.
Add garlic, jalapeno, oregano and salt and sautee 1 minute longer.
Add tomato with juices and reduce heat to low.
Cook, stirring until soft for about 15 minutes.
Adjust salt to taste, add pepper and sugar to taste.
Let cool then transfer to blender and puree until smooth. Set aside.
Prepare Cabbage Rolls:

Bring large pot of salted water to boil.
Drop cabbage into pot and boil until leaves soften, about 10 minutes.
Drain and immerse cabbage in cold water. Drain.
Separate leaves from head carefully and cut off tough part from bottom of each leaf.
Heat oil in pan and add onion sauteeing 5 minutes.
Add garlic, carrot, bell pepper, celery, cumino, and oregano sauteeing for 1 minute.
Remove from heat and let cool.
Combine meat onion mixture, rice, egg, breadcrumbs, salt, pepper and 3 tablespoons of prepared salsa mixing well.
Preheat oven to 300 degrees Fahrenheit.
Place small handful of meat on flattened leaf and roll into a cylinder tucking ends in.
Place in baking dish with folded side down.
Pour salsa over rolls and bake covered for 1 hour.
