Ingredients


    Old Fashioned Oats, 1 cup, processed into flour
    Whole Wheat Flour, 2 cups
    Whey protein powder 100 grams (3 scoops)
    Cinnamon, ground, 2 tsp
    Nutmeg, ground, 1/2 tsp
    Allspice, 1/2 tsp
    Cardamom, ground, 1/8 tsp
    Baking Soda, 2 tsp
    Baking Powder, 2 tsp
    Salt, 1 tsp
    Eggs, fresh, 2 large
    Applesauce, sweetened, 3 1/2 cups
    Vanilla Extract, 2 tsp
    Apple Cranberry Juice, 12 oz
    Ocean Spray, Craisins Original Sweetened Dried Cranberries 2 cups, chopped

Directions

Preheat oven to 425 degrees Fahrenheit. Spray muffin pans with non-stick baking spray. In medium bowl, mix together flours, protein powder, dry milk, and all other dry ingredients. In large bowl, beat together eggs. Add applesauce, cranberry juice, and vanilla. Blend. Add dried cranberries and stir to mix. Pour into muffin tins. Bake at 425 degree for 20 minutes. Cool. Makes 25 muffins.
