    2 C chopped frozen cauliflower, cooked
    4 T fat free half and half
    3/4 C parmesan, grated
    1/4 C low fat plain yogurt
    1 T butter substitute
    Salt & Pepper to taste


Cook cauliflower as directed on package. Drain well. Blitz with the other ingredients in a food processor (for best results).

Cream cheese and/or goat cheese make excellent additions but would obviously affect the nutrition counts.
