Number of Servings: 5


    8 oz green beans
    1/4 cup sun-dried tomatoes
    1 can (19 oz) chick peas
    1 can (19 oz) black beans
    1 red or yellow bell pepper, diced
    1 cup diced sweet onion, diced
    1 tbs extra-virgin olive oil
    3 tbs balsamic vinegar
    1/2 tsp black pepper
    1/2 tsp salt
    1/2 cup chopped mixed fresh herbs (parsley, mint, basil)


Serves 4-6

1. Place green beans in boiling water for 3 minutes, then rinse under cold water. Cut beans into 1 inch pieces and place in large bowl.

2. Soak tomatoes in 1/2 cup boiling water for 10 minutes. Drain, saving liquid. Chop tomatoes and add to beans. Add chick peas, black beans, bell pepper and onion.

3. Dressing: In small bowl whisk together vinegar, oil, 2 tbs of reserved tomato liquid, salt and pepper. Pour over salad and toss to coat. Add fresh herbs and toss again.
