Introduction

One of my healthiest muffins - and one of my favourites too! Under 76 calories and 1 gram of fat each, and good fibre content too. Pictures are of some cute tree shaped ones I made for Christmas! Ingredients

    Whole Wheat Flour, selfraising, 1/4 cup
    Cereal, Bran, unprocessed,60 gram
    Processed Bran, (e.g. All Bran) 1/4 cup (17grams)
    Baking Powder, 0.5 tsp
    Baking Soda, 0.5 tsp
    Hermesetas or other solid sweetener, 1/4 cup
    Skim Milk, 0.25 cup
    Peaches, tinned,in natural juice, 160 grams
    Coconut Essence/Flavour, 1 tsp

Directions

1. Preheat oven to 180
2. Combine all dry ingredients
3. Combine Peaches, coconut essence and Milk - I use a mini blender, just a few quick pulses, trying not to totally liquify the fruit
4. Combine the wet and dry parts
5. Divide into 6 muffin cups equally
6. Bake for 20 minutes
7. Cool in pan, and resist trying to get them out of cups until well cooled, or they will stick
