    1/2 cup fresh spinach, sauteed
    1/2 cup fresh mushrooms, sauteed
    4 large or 5 medium eggs
    1 1/2 cups of nonfat or lowfat milk
    2 cups of cheese
    seasonings of your choice


Preheat oven to 350 degrees

Sautee the vegetables individually in a nonstick pan with 1/2 tsp of canola oil. Spread them at the bottom of a 9" pie pan. Place 2 cups of shredded cheese over the vegetables.

In a separate bowl, whisk together the eggs and milk. Add any herbs or seasonings you'd like (I used Greek seasoning and dry mustard). Pour the egg mixture over the cheese/vegetables in the pie pan.

Bake on the center rack at 350 for 30-40 minutes. The top should be brown, and a knife inserted should come out clean. Serve hot, room temperature, or cold.

Calculated serving size = 1/4 pie. Nutritional information is for the listed fillings, but you can use any fillings and any kind of cheese to suit your taste.
